Swedish Coffee Cake

A reader requested a recipe for "Swedish Coffee Cake".

Yield: 10 servings


I remember as a child visiting my Grandmother Sadie and my
Aunt Phyllis at there home on Lake Winnisquam, N.H. and Aunt
Phyllis would always make this Coffee Cake. I loved the way it
made her kitchen smell on a cool summer night.


* 1/2 cup brown sugar
* 1 teaspoon cinnamon
* 1/2 cup chopped walnuts
* 1/4 cup oleo (shortening)
* 1 cup sugar
* 2 eggs
* 1/2 pint sour cream or plain yogurt
* 2 cups all-purpose flour
* 1 teaspoon baking powder
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1 teaspoon vanilla


Preheat oven to 350 degrees F. Mix together brown sugar, cinnamon
and nuts; set aside. In a separate bowl, cream together oleo
(shortening), sugar, eggs, and sour cream; set aside. In a separate
bowl, combine flour, baking powder, baking soda, and salt.


Add dry ingredients to creamed mixture. Beat until smooth. Add
vanilla. Blend well. Pour 1/2 batter into greased tube pan. Sprinkle
3/4 brown sugar mixture over this then add rest of batter and top
with remaining brown sugar mix. Bake 40 minutes.
