THANKS TO RUSS H. FOR REQUESTING THE RECIPE FOR THE
BISQUICK APPLE COFFEE CAKE. MY GRANDMOTHER MADE THAT
CAKE FOR YEARS AND I FOLLOWED SUIT, TAKING THE RECIPE OFF
THE BISQUICK BOX. ALAS, OVER THE YEARS THE RECIPE
DISAPPEARED. NOW I HAVE BEEN SEARCHING HIGH AND LOW
AND TRYING TO RACK MY BRAIN TO TRY TO REMEMBER AND ALL I
HAVE TO DO WAS OPEN MY FEBRUARY E-MAIL AND LOW AND
BEHOLD, THERE IT WAS.
THANKS TO RUSS FOR REQUESTING THE RECIPE AND THANKS TO
THE PERSON WHO RESPONDED. YOU REALLY MADE MY DAY.

First I have to tell you the funny story about this cobbler, a friend wanted
the recipe but she wasn't home when I called, so her husband took it down
for her. It calls for 4t baking powder but he wrote down 4T & she being a
newlywed, I guess didn't know you would never use that much, so she
faithfully follows the recipe!! Of course it bubbled & was like a volcano all
over her oven & made a huge mess! That was the end of his recipe
writing career!

Best and easiest cobbler from Mom.

Melt 1/2 stick margarine in baking dish. Use dish so it is only half
full when placing in oven. Dough puffs up and juice bubbles
vigorously when baking.

In separate bowl:
Mix 1 cup flour, 1 cup sugar, 2 teaspoons baking powder, 1/4 teaspoon
salt and 1 cup milk. Pour this into buttered baking dish. Spoon one
large can peaches (and juice) evenly over dough. Do NOT stir. Bake
in 400* oven for 15 minutes and then at 300* until done. Sprinkle with
small amount sugar and cinnamon if desired.
With fresh peaches I peel and slice 4-6 peaches and cook with water
and small amount of sugar (depending on sweetness of peaches) for
about 10 minutes. The juice with this cobbler is important. Cherries,
dewberries, apples or pineapple alone or in combination or great in
substitutes in this recipe. I usually double this recipe and use my
large lasagne baking dish for family events. Shirley Rhoades

Straight from the Wilson Family Cookbook, from icy southern Ohio,
here is the best cobbler recipe ever!! My grandpa loved it and I think
you will too.

MOM'S PEACH COBBLER

3 c. sliced peaches
1 Tbl lemon juice
1 c. sifted flour
1 c. sugar
1/2 tsp salt
1 beaten egg
6 Tbl melted oleo(margarine)
1 pint vanilla ice cream-softened
3/4 tsp cinnamon

Place peaches on bottom of 10 x 6 x 12 inch baking dish. Sprinkle with
lemon juice. Sift dry ingredients; add beaten egg, tossing with fork until
crumbly, sprinkle over peaches. Drizzle melted margarine over all. Bake
at 375 for 35 or 40 minutes. Combine softened ice cream with cinnamon
and top the cobbler at serving time.

Makes 6 big servings. Good hot or cold. Can also be served with half
and half. Stacy
