Irish Potato Cake

For Dave W., a recipe for Irish Potato Pancakes known as Boxty....


Boxty Pancakes


Boxty was traditionally eaten with freshly churned butter on St.
Brighid's Day - February 1st. The word is from the Irish "Bacstai"
and refers to the traditional method of grilling over an open fire.
There's also a popular old rhyme associated with the term:
"Boxty on the griddle, Boxty in the pan,
if you can't make a Boxty, you'll never get your man."


The following recipes serve four to six.


Boxty
Ingredients:
8 oz potatoes freshly cooked in their jackets
8 oz peeled raw potatoes
2 cups white flour
1/4 teaspoon baking soda
1 to 1 1/2 cups buttermilk
Salt (optional)
Butter for frying.


Method:
Peel the cooked potatoes while still hot and mash.
Grate the raw potatoes and add to the mashed potatoes.
Add flour and soda. Add salt if desired.
Mix well and add enough buttermilk to make a stiff batter.
Heat a heavy frying pan and grease with butter.
Drop batter by spoonfuls onto heated pan and cook until crispy and
golden brown on both sides.

From the Antoinette Pope School Cook Book:
Fresh Potato Pancakes
2 large eggs, lightly beaten
2 TBLS milk (or a little more if needed)
2 TBLS all-purpose flour
¼ tsp baking powder
1 ¼ tsp salt
about 1/8 tsp pepper
1/8 tsp onion salt
1 lb (2 large) raw potatoes, peeled


In medium bowl combine eggs, milk, flour, baking powder, salt,
pepper & onion salt. With hand mixer, beat until smooth. Grate
raw potatoes into liquid preparation.


To fry pancakes, stir well each time, pick up with a large spoon &
pour into about 1/16" very hot unsalted shortening or cooking oil.
With back of spoon flatten each one, and fry over medium heat
until golden brown & crisp on 1 side, for about 5 minutes. With
pancake turner, turn over & fry second side for several minutes.


Makes about 12 medium size pancakes. Enjoy! Sue

Irish Pancakes


1 Cup All Purpose Flour
2 Teaspoon Baking Powder
1 Teaspoon Salt
1 Pound Potatoes
2 Large Eggs, slightly beaten
1/4 Cup Butter, melted
4 Tablespoons Milk
Extra Butter
1 Tablespoon Nutmeg can be added ****Optional****


Stir together flour, baking powder and salt.(Nutmeg)***


Peel 1/2 pound of potatoes and steam or boil until tender; mash
fine-there should be 1 firmly packed cup.


Peel the remaining potatoes and finely shred; press out liquid-there
should be 1 lightly packed cup.


Add mashed potatoes, shredded potatoes and eggs to flour mixture;
mix well; stir in butter. Gradually stir in enough milk to make a soft batter.


Melt a generous amount of extra butter in a large heavy skillet; add
heaping tablespoons of the batter, well apart; fry over moderate heat,
turning as necessary, until cooked through and browned on both
sides. Keep warm in a low oven. Fry remaining batter the same way.
Serve hot with butter. Makes 14.

Potato Pancake Recipe
Simple but good. Not just for breakfast either, good as a side
dish for dinner.


4 servings
time to make 15 min 5 min prep
2 1/2 lbs grated potatoes
2 eggs
1 1/4 cups flour
1 teaspoon garlic salt
1 teaspoon onion salt
1/2 teaspoon black pepper
4 tablespoons oil


1. In a medium mixing bowl, add all ingredients except oil, and
mix together.
2. Heat oil over medium high heat in a large frying pan.
3. Drop about 1/2 cup (or desired size) of potato mix into pan,
and flatten with a spatula.
4. Allow to cook about 5 minutes on each side, or until golden brown.
5. **Add more flour for thicker batter, or add milk as desired
for thinner batter.
